There he was. We rounded the corner at the Washington Cemetery and this buck was standing there with a doe. We rolled our windows down and enticed him with chopped apples. Organic ones, because deer need to eat pesticide free too. :)   (more…)

Yesterday evening we drove to the cemetery to feed the deer. As soon as we drive in, we see this buck. He comes up to the truck without a care in the world. He smells apples!

Breakfast was tasty this morning. We found a gluten free hot cereal made with rice flour, cornmeal, and buckwheat flour, so we decided to give it a try. We topped the cereal with soft boiled eggs plus had home fries, fresh fruit, and hot cocoa to make a full and hearty meal.   (more…)

Mango and Cherry Almond Cake

It’s been awhile since we’ve updated the blog. We had to leave Grenada early so there were loose ends here and there we needed to handle and take care of. There’s been a family emergency and we needed to be back in PA. This time, we were only stuck at the Miami International Airport for 3 hours instead of 7. I thought the art display was rather neat and thought you guys would like it too.

We missed J’s Mom’s birthday by a few days, but to make up for it, we’re going to bake a week’s worth of mango desserts for her. She loves mangoes!

I made a mango and cherry almond cake that was gluten free, dairy free, and sugar free. It was crunchy on the outside, moist inside, and the fruit gave it just the right amount of sweetness. Yum!

Cherries had to be halved and pitted.

The pan was lined with fresh mangoes and cherries.

Extra fruit was placed on the bottom of the cake and was baked for 25-30 minutes to golden brown.

Here’s the finished product. For a first time bake I think it went very well. There weren’t any leftovers so I think the cake was a hit.

Friends and family were over for a BBQ and there was food galore. Family friends brought chocolate gluten free cupcakes (among many other dishes) that were scrumptious. The cupcakes were just as good as a regular cupcake, except there was a richer chocolate flavor. We were extra patriotic even our food was color coordinated. :)

Date Night In an Orange Ostrich Leather Hummer

Check out the awesome ride that picked us up on date night! We had a double date tonight with J’s childhood buddy and his wife. They picked us up in this monster of a truck with chromed out wheels, so polished that it glitters in the sun, and tint so dark you couldn’t see through the windows with a spotlight. This baby is fiery orange and fades into a dark midnight black. The interior is even more impressive. The seats are trimmed in buttery orange leather and the seats are black ostrich that’s rich and velvet soft.

We had dinner at a Mediterranean restaurant, which doesn’t compare to the places we’ve eaten in Houston, but it was good. J’s friends were super sweet and took us to Rita’s Ice after dinner so that I could get a dairy free dessert. Their custard is supposed to be out of this world, but I couldn’t try any.

I got a mango ice which hit the spot. It was similar to a snow cone but smoother. A little sweet, but a small ice is perfect to share with your sweetie.
